Description

Apple Cider Whoopie Pies are a delightful fall treat that combines the flavors of apple cider and spices in a soft, cake-like cookie filled with creamy frosting.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 cup apple cider
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, cream together brown sugar, granulated sugar, and butter until light and fluffy.
  4. Add the egg, apple cider, and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are lightly golden. Let cool completely.
  8. In a separate bowl, beat together cream cheese, powdered sugar, and vanilla extract until smooth.
  9. Spread or pipe the cream cheese filling onto the flat side of one cookie and top with another cookie to form a sandwich.
  10. Repeat with remaining cookies and filling.
