Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, cream together the butter and brown sugar until light and fluffy.
- Add the egg, apple cider, and vanilla extract to the butter mixture and mix well.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop spoonfuls of the batter onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes or until the edges are lightly golden. Let cool completely.
- For the frosting, beat together the cream cheese, butter, and powdered sugar until smooth.
- Spread frosting on the flat side of one cookie and sandwich with another cookie.
