Ingredients

  • 3 lbs pork shoulder
  • 2 cups apple cider
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh rosemary
  • Salt and pepper to taste
  • 1 cup chicken broth

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat.
  3. Season the pork shoulder with salt and pepper, then sear on all sides until browned.
  4. Remove the pork and set aside. In the same pot, add onions and garlic, sautéing until softened.
  5. Add apple cider, chicken broth, thyme, and rosemary to the pot, stirring to combine.
  6. Return the pork to the pot, cover, and transfer to the oven.
  7. Braise for 3-4 hours, or until the pork is fall-apart tender.
  8. Remove from the oven, let rest for a few minutes, then shred the pork and serve with the sauce.

  • For extra flavor, marinate the pork in apple cider overnight.
