Description

Ingredients

  • 10 small corn tortillas
  • 2 cups shredded cooked chicken
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup salsa
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Cooking spray

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. In a bowl, mix together the chicken, cheese, black beans, salsa, cumin, and garlic powder.
  3. Warm the corn tortillas in the microwave for about 30 seconds to make them pliable.
  4. Place a spoonful of the filling on each tortilla and roll them tightly.
  5. Spray the air fryer basket with cooking spray and place the taquitos seam-side down in a single layer.
  6. Spray the tops of the taquitos with cooking spray.
  7. Air fry for 8-10 minutes, or until golden brown and crispy.
  8. Serve with additional salsa or guacamole for dipping.
