Air Fryer Taquitos are a healthier alternative to traditional taquitos, perfect for game day snacking without the guilt.

- 10 small corn tortillas
- 2 cups shredded cooked chicken
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup black beans, rinsed and drained
- 1/2 cup salsa
- 1 tsp cumin
- 1 tsp garlic powder
- Cooking spray
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a bowl, mix together the chicken, cheese, black beans, salsa, cumin, and garlic powder.
- Warm the corn tortillas in the microwave for about 30 seconds to make them pliable.
- Place a spoonful of the filling on each tortilla and roll them tightly.
- Spray the air fryer basket with cooking spray and place the taquitos seam-side down in a single layer.
- Spray the tops of the taquitos with cooking spray.
- Air fry for 8-10 minutes, or until golden brown and crispy.
- Serve with additional salsa or guacamole for dipping.
Notes
- For a vegetarian option, substitute chicken with sautéed vegetables or beans.
- Make sure not to overcrowd the air fryer basket for even cooking.
- These taquitos can be frozen before cooking for a quick snack later.
